The overnight ritual behind a proper dal makhani

Dal makhani rewards time. Whole black lentils need a long soak, a gentle cook, and then another slow simmer until their texture becomes creamy without losing all definition.

Butter and cream may make the dish luxurious, but they are not its foundation. The real depth comes from the lentils themselves, patient heat, and a restrained tomato base. A final smoky note can be added at the end, but it should never overpower the dal.

This is why we begin the dish a day before it reaches the menu. Some forms of comfort cannot be rushed.
